Green Chicken Curry

Green Chicken Curry 
 I cooked this meal on a Monday night and all the left overs were gone by Tuesday afternoon. This was a great tasting recipe!! I added bok choy for some add vegetation. The picture above is just the chicken and sauce... you obviously serve over rice. We chose organic long grain brown rice. 

Ingredients -
4 spring onions (scallions)
1-2 fresh green chillies
3/4 inch fresh ginger root
2 garlic cloves
1 tsp Thai fish sauce
Large bunch of cilantro
Small handful of fresh parsley
2-3 tbsp water
2 tbsp sunflower oil (I used sessamee oil instead)
4 skinless, boneless chicken breast
1 green bell pepper
2 1/2 cups coconut milk
salt and ground pepper
Hot rice

Place all ingredients, minus chicken and rice in a food processor to make a sauce. Mix with coconut milk. Cook chicken. Cook rice. Serve up!

Kurt and I both rated this a ten star meal. There were no left overs to claim. This will be made again and again in our house.
